  • Salt - to taste

Steps

  1. In a pan, heat the oil over medium heat.
  2. Add mustard seeds and let them splutter. Then add cumin seeds, curry leaves, and slit green chilies, sautéing for a minute.
  3. Stir in the turmeric powder and peanuts, cooking for another minute until the peanuts are slightly golden.
  4. Add the cooked rice to the pan, mixing well to coat the rice with the spices.
  5. Pour in the lemon juice and add salt to taste, stirring gently to combine all ingredients.
  6. Cook for an additional 2-3 minutes to heat through.
  7. Garnish with fresh coriander leaves before serving.
