- Potatoes - 200 grams, diced
- Carrots - 100 grams, diced
- Green beans - 100 grams, chopped
- Onion - 1 medium, finely chopped
- Tomato - 1 medium, chopped
- Green chili - 1, slit
- Ginger - 1 teaspoon, grated
- Garlic - 2 cloves, minced
- Mustard seeds - 1 teaspoon
- Cumin seeds - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1 teaspoon
- Salt - to taste
- Oil - 2 tablespoons
- Coriander leaves - a handful, chopped
Steps
- Heat 2 tablespoons of oil in a pan over medium heat.
- Add 1 teaspoon of mustard seeds and 1 teaspoon of cumin seeds. Once they start to splutter, add the finely chopped onion and sauté until translucent.
- Stir in the grated ginger, minced garlic, and slit green chili. Cook for a minute until fragrant.
- Add the diced potatoes, carrots, and green beans to the pan. Mix well and cook for about 5 minutes, stirring occasionally.
- Sprinkle in 1/2 teaspoon of turmeric powder, 1 teaspoon of red chili powder, and salt to taste. Mix thoroughly to coat the vegetables with spices.
- Add the chopped tomato and cover the pan. Cook for another 10-15 minutes or until the vegetables are tender, stirring occasionally.
- Once cooked, remove from heat and garnish with chopped coriander leaves.
- Serve hot with steamed rice or chapati.
