- Basmati rice - 1 cup
- Water - 2 cups
- Vegetable oil - 2 tablespoons
- Mustard seeds - 1 teaspoon
- Cumin seeds - 1 teaspoon
- Chopped onions - 1 medium
- Ginger-garlic paste - 1 teaspoon
- Chopped green chilies - 1-2 (adjust to taste)
- Chopped tomatoes - 1 medium
- Carrot (finely chopped) - 1 medium
- Green peas - 1/2 cup
- Turmeric powder - 1/2 teaspoon
- Garam masala - 1 teaspoon
- Coriander powder - 1 teaspoon
- Salt - to taste
- Fresh coriander leaves (chopped) - for garnish
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
- In a pot, heat the vegetable oil over medium heat. Add mustard seeds and cumin seeds, letting them splutter.
- Add chopped onions and sauté until they turn golden brown.
- Stir in the ginger-garlic paste and green chilies, cooking for an additional minute until fragrant.
- Add the chopped tomatoes, carrots, and green peas, cooking until the tomatoes soften.
- Stir in turmeric powder, garam masala, coriander powder, and salt, mixing well.
- Drain the soaked rice and add it to the pot, gently stirring to combine with the vegetables and spices.
- Pour in 2 cups of water and bring to a boil. Reduce the heat to low, cover the pot, and simmer for 15-20 minutes until the rice is cooked and the water is absorbed.
- Remove from heat and let it sit covered for 5 minutes. Fluff the rice with a fork before serving.
- Garnish with freshly chopped coriander leaves and serve hot.
