Ingredients

  • Semolina - 100 grams
  • Ghee (clarified butter) - 2 tablespoons
  • Water - 300 milliliters
  • Milk - 100 milliliters
  • Sugar - 50 grams
  • Saffron strands - a pinch
  • Cashews - 15 grams
  • Raisins - 15 grams
  • Cardamom powder - 1/4 teaspoon
  • Salt - a pinch

Steps

  1. Heat the ghee in a pan on medium heat and add the semolina. Roast the semolina until it turns light golden brown, stirring continuously to avoid burning.
  2. In a separate pot, bring the water and milk to a boil. Add the saffron strands and let it steep for a few minutes.
  3. Once the semolina is roasted, slowly pour in the boiling water and milk mixture while stirring continuously to avoid lumps.
  4. Add sugar, cardamom powder, and a pinch of salt. Mix well and cook on low heat until the mixture thickens and the semolina absorbs the liquid.
  5. In another small pan, heat a little ghee and fry the cashews and raisins until golden. Add them to the semolina mixture and stir well.
  6. Remove from heat, cover, and let it sit for a few minutes to allow the flavors to meld before serving.
