Ingredients

  • All-purpose flour - 1 cup
  • Semolina - 2 tablespoons
  • Ghee - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Water - as needed
  • Split yellow moong dal - 1/2 cup
  • Cumin seeds - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Red chili powder - 1/2 teaspoon
  • Turmeric powder - 1/4 teaspoon
  • Garam masala - 1/2 teaspoon
  • Fresh coriander leaves - 2 tablespoons, chopped
  • Lemon juice - 1 teaspoon
  • Oil - for deep frying

Steps

  1. In a mixing bowl, combine all-purpose flour, semolina, ghee, and salt. Mix well, then gradually add water to form a soft dough. Cover with a damp cloth and let it rest for 20 minutes.
  2. Rinse the split yellow moong dal and soak it in water for 30 minutes. Drain and set aside.
  3. In a pan, heat a teaspoon of oil and add cumin seeds. Once they crackle, add the soaked moong dal, coriander powder, red chili powder, turmeric powder, and garam masala. Cook for about 5-7 minutes until the dal is soft but not mushy.
  4. Add chopped coriander leaves and lemon juice to the dal mixture. Mix well and let it cool.
  5. Divide the rested dough into equal parts and roll each into a small ball. Flatten each ball into a disc, place a spoonful of the dal mixture in the center, and fold the edges to seal it tightly.
  6. Heat oil in a deep frying pan over medium heat. Once hot, carefully slide in the kachoris and fry until they are golden brown and crispy on both sides.
  7. Remove the kachoris and drain on paper towels. Serve hot with mint chutney and tamarind sauce.
