Ingredients
- All-purpose flour - 1 cup
- Semolina - 2 tablespoons
- Ghee - 2 tablespoons
- Salt - 1/2 teaspoon
- Water - as needed
- Split yellow moong dal - 1/2 cup
- Cumin seeds - 1 teaspoon
- Coriander powder - 1 teaspoon
- Red chili powder - 1/2 teaspoon
- Turmeric powder - 1/4 teaspoon
- Garam masala - 1/2 teaspoon
- Fresh coriander leaves - 2 tablespoons, chopped
- Lemon juice - 1 teaspoon
- Oil - for deep frying
Steps
- In a mixing bowl, combine all-purpose flour, semolina, ghee, and salt. Mix well, then gradually add water to form a soft dough. Cover with a damp cloth and let it rest for 20 minutes.
- Rinse the split yellow moong dal and soak it in water for 30 minutes. Drain and set aside.
- In a pan, heat a teaspoon of oil and add cumin seeds. Once they crackle, add the soaked moong dal, coriander powder, red chili powder, turmeric powder, and garam masala. Cook for about 5-7 minutes until the dal is soft but not mushy.
- Add chopped coriander leaves and lemon juice to the dal mixture. Mix well and let it cool.
- Divide the rested dough into equal parts and roll each into a small ball. Flatten each ball into a disc, place a spoonful of the dal mixture in the center, and fold the edges to seal it tightly.
- Heat oil in a deep frying pan over medium heat. Once hot, carefully slide in the kachoris and fry until they are golden brown and crispy on both sides.
- Remove the kachoris and drain on paper towels. Serve hot with mint chutney and tamarind sauce.
