- Fish (preferably Kingfish) - 300 grams
- Coconut oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Tomato - 1 medium, chopped
- Ginger-garlic paste - 1 tablespoon
- Coconut milk - 200 ml
- Tamarind pulp - 1 tablespoon
- Turmeric powder - 1 teaspoon
- Red chili powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Garam masala - 1/2 teaspoon
- Salt - to taste
- Fresh coriander leaves - for garnish
- Water - 100 ml
Steps
- Heat coconut oil in a pan over medium heat. Add the finely chopped onion and sauté until it turns golden brown.
- Stir in the ginger-garlic paste and sauté for an additional minute until fragrant.
- Add the chopped tomato and cook until it softens and blends into the mixture.
- Sprinkle in the turmeric powder, red chili powder, coriander powder, and salt. Mix well and cook for 2-3 minutes.
- Pour in the coconut milk and bring the mixture to a gentle simmer.
- Add the tamarind pulp and stir to combine. Adjust the consistency by adding 100 ml of water if necessary.
- Once the gravy is simmering, gently add the fish pieces and cook for about 8-10 minutes until the fish is cooked through.
- Sprinkle garam masala over the curry and give it a gentle stir.
- Garnish with fresh coriander leaves before serving. Serve hot with steamed rice or chapati.
