Ingredients

  • Rice flour - 100 grams
  • Urad dal (split black gram) - 50 grams
  • Chana dal (split chickpeas) - 50 grams
  • Curd (yogurt) - 100 grams
  • Water - 150 ml
  • Turmeric powder - 1/2 teaspoon
  • Baking soda - 1/2 teaspoon
  • Green chilies (finely chopped) - 1 teaspoon
  • Ginger (grated) - 1 teaspoon
  • Salt - 1 teaspoon
  • Coriander leaves (chopped) - 2 tablespoons
  • Mustard seeds - 1 teaspoon
  • Oil - 1 tablespoon
  • Lemon juice - 1 tablespoon

Steps

  1. Soak urad dal and chana dal in water for at least 4 hours or overnight.
  2. Drain the soaked dals and blend them with rice flour, curd, and water into a smooth batter.
  3. Add turmeric powder, baking soda, green chilies, ginger, and salt to the batter. Mix well and let it ferment for about 2 hours.
  4. Once fermented, grease a steaming tray with a little oil and pour the batter into it.
  5. Steam the batter for about 20 minutes or until a toothpick inserted comes out clean.
  6. In a small pan, heat oil and add mustard seeds. Once they crackle, pour this tempering over the steamed dhokla.
  7. Drizzle lemon juice and garnish with chopped coriander leaves before serving.
