Ingredients
- Rice flour - 100 grams
- Urad dal (split black gram) - 50 grams
- Chana dal (split chickpeas) - 50 grams
- Curd (yogurt) - 100 grams
- Water - 150 ml
- Turmeric powder - 1/2 teaspoon
- Baking soda - 1/2 teaspoon
- Green chilies (finely chopped) - 1 teaspoon
- Ginger (grated) - 1 teaspoon
- Salt - 1 teaspoon
- Coriander leaves (chopped) - 2 tablespoons
- Mustard seeds - 1 teaspoon
- Oil - 1 tablespoon
- Lemon juice - 1 tablespoon
Steps
- Soak urad dal and chana dal in water for at least 4 hours or overnight.
- Drain the soaked dals and blend them with rice flour, curd, and water into a smooth batter.
- Add turmeric powder, baking soda, green chilies, ginger, and salt to the batter. Mix well and let it ferment for about 2 hours.
- Once fermented, grease a steaming tray with a little oil and pour the batter into it.
- Steam the batter for about 20 minutes or until a toothpick inserted comes out clean.
- In a small pan, heat oil and add mustard seeds. Once they crackle, pour this tempering over the steamed dhokla.
- Drizzle lemon juice and garnish with chopped coriander leaves before serving.
