Ingredients

  • Cauliflower - 200 grams, cut into florets
  • Carrot - 1 medium, diced
  • Green peas - 100 grams, fresh or frozen
  • Potato - 1 medium, diced
  • Onion - 1 medium, finely chopped
  • Tomato - 1 medium, chopped
  • Coconut - 50 grams, grated
  • Curry leaves - 10 leaves
  • Mustard seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1/2 teaspoon
  • Salt - to taste
  • Oil - 2 tablespoons
  • Water - 400 ml
  • Fresh coriander - for garnish

Steps

  1. Heat oil in a pan over medium heat and add mustard seeds. Once they start to splutter, add curry leaves and sauté for a few seconds.
  2. Add the chopped onions and sauté until they turn translucent.
  3. Stir in the chopped tomatoes and cook until soft, about 5 minutes.
  4. Add turmeric powder, red chili powder, coriander powder, and salt. Mix well and cook for 2 minutes to release the flavors.
  5. Add the diced potatoes, carrots, and cauliflower florets to the pan. Mix well to coat the vegetables with the spices.
  6. Pour in the water and bring to a boil. Reduce heat, cover, and simmer for about 10 minutes until the vegetables are tender.
  7. Stir in the green peas and grated coconut, and cook for an additional 5 minutes.
  8. Sprinkle garam masala over the curry, stir gently, and cook for another minute.
  9. Garnish with fresh coriander leaves before serving.
