- Cauliflower - 200 grams, cut into florets
- Carrot - 1 medium, diced
- Green peas - 100 grams, fresh or frozen
- Potato - 1 medium, diced
- Onion - 1 medium, finely chopped
- Tomato - 1 medium, chopped
- Coconut - 50 grams, grated
- Curry leaves - 10 leaves
- Mustard seeds - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Garam masala - 1/2 teaspoon
- Salt - to taste
- Oil - 2 tablespoons
- Water - 400 ml
- Fresh coriander - for garnish
Steps
- Heat oil in a pan over medium heat and add mustard seeds. Once they start to splutter, add curry leaves and sauté for a few seconds.
- Add the chopped onions and sauté until they turn translucent.
- Stir in the chopped tomatoes and cook until soft, about 5 minutes.
- Add turmeric powder, red chili powder, coriander powder, and salt. Mix well and cook for 2 minutes to release the flavors.
- Add the diced potatoes, carrots, and cauliflower florets to the pan. Mix well to coat the vegetables with the spices.
- Pour in the water and bring to a boil. Reduce heat, cover, and simmer for about 10 minutes until the vegetables are tender.
- Stir in the green peas and grated coconut, and cook for an additional 5 minutes.
- Sprinkle garam masala over the curry, stir gently, and cook for another minute.
- Garnish with fresh coriander leaves before serving.
