Ingredients

  • Chicken, cut into pieces - 500 grams
  • Onion, finely chopped - 1 medium (150 grams)
  • Tomato, pureed - 1 medium (100 grams)
  • Coconut milk - 200 ml
  • Ginger-garlic paste - 1 tablespoon
  • Green chilies, slit - 2
  • Curry leaves - 10
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1/2 teaspoon
  • Salt - to taste
  • Oil (preferably coconut or vegetable) - 2 tablespoons
  • Fresh coriander leaves, chopped - for garnish

Steps

  1. Heat oil in a pan over medium heat. Add the chopped onions and sauté until golden brown.
  2. Add ginger-garlic paste and green chilies, and cook for 2 minutes until the raw smell disappears.
  3. Stir in the pureed tomato and cook until the oil separates from the mixture.
  4. Add turmeric powder, red chili powder, coriander powder, and salt. Mix well and cook for another 2-3 minutes.
  5. Add the chicken pieces to the pan and stir to coat them with the spice mixture. Cook for about 5 minutes until the chicken is no longer pink.
  6. Pour in the coconut milk and add the curry leaves. Stir to combine and bring to a gentle simmer.
  7. Cover and cook for 15-20 minutes until the chicken is tender and cooked through.
  8. Stir in the garam masala and cook for an additional 2 minutes.
  9. Garnish with fresh coriander leaves before serving. Enjoy with rice or roti.
