- Chicken, cut into pieces - 500 grams
- Onion, finely chopped - 1 medium (150 grams)
- Tomato, pureed - 1 medium (100 grams)
- Coconut milk - 200 ml
- Ginger-garlic paste - 1 tablespoon
- Green chilies, slit - 2
- Curry leaves - 10
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Garam masala - 1/2 teaspoon
- Salt - to taste
- Oil (preferably coconut or vegetable) - 2 tablespoons
- Fresh coriander leaves, chopped - for garnish
Steps
- Heat oil in a pan over medium heat. Add the chopped onions and sauté until golden brown.
- Add ginger-garlic paste and green chilies, and cook for 2 minutes until the raw smell disappears.
- Stir in the pureed tomato and cook until the oil separates from the mixture.
- Add turmeric powder, red chili powder, coriander powder, and salt. Mix well and cook for another 2-3 minutes.
- Add the chicken pieces to the pan and stir to coat them with the spice mixture. Cook for about 5 minutes until the chicken is no longer pink.
- Pour in the coconut milk and add the curry leaves. Stir to combine and bring to a gentle simmer.
- Cover and cook for 15-20 minutes until the chicken is tender and cooked through.
- Stir in the garam masala and cook for an additional 2 minutes.
- Garnish with fresh coriander leaves before serving. Enjoy with rice or roti.
