Ingredients
- Basmati rice - 1 cup (200g)
- Chicken, boneless and cut into bite-sized pieces - 250g
- Onion, thinly sliced - 1 medium
- Tomato, chopped - 1 medium
- Ginger-garlic paste - 1 tablespoon
- Green chilies, slit - 2
- Yogurt - 1/4 cup (60g)
- Biryani masala - 1 tablespoon
- Cilantro, chopped - 2 tablespoons
- Mint leaves, chopped - 2 tablespoons
- Bay leaf - 1
- Cinnamon stick - 1 inch
- Cloves - 4
- Cardamom pods - 2
- Salt - to taste
- Oil - 2 tablespoons
- Water - 2 cups (500ml)
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
- In a heavy-bottomed pot, heat the oil over medium heat. Add the sliced onions and sauté until they turn golden brown.
- Add the ginger-garlic paste and green chilies to the pot, and sauté for another 2 minutes until fragrant.
- Stir in the chopped tomatoes and cook until they soften, about 3-4 minutes.
- Add the chicken pieces to the pot, followed by the biryani masala and salt. Cook until the chicken is browned on all sides.
- Lower the heat and mix in the yogurt, chopped cilantro, and mint leaves. Cook for another 5 minutes until the chicken is well coated with the spices.
- In a separate pot, bring 2 cups of water to a boil. Drain the soaked basmati rice and add it to the boiling water.
- Cook the rice until it is 70% done (about 5-7 minutes), then drain the water.
- Layer the partially cooked rice over the chicken mixture in the pot. Add the bay leaf, cinnamon stick, cloves, and cardamom pods on top.
- Cover the pot with a lid and cook on low heat for 15-20 minutes until the rice is fully cooked and has absorbed all the flavors.
- Turn off the heat and let it rest for 5 minutes before fluffing the biryani with a fork.
- Serve hot, garnished with additional cilantro and mint leaves if desired.
