- Rice flour - 200 grams
- Boiling water - 180 ml
- Chopped onion - 50 grams
- Chopped coriander leaves - 20 grams
- Grated carrot - 30 grams
- Chopped green chili - 1 (adjust to taste)
- Salt - 1 teaspoon
- Oil - 2 tablespoons (for cooking)
- Cumin seeds - 1/2 teaspoon
Steps
- In a mixing bowl, combine the rice flour, chopped onion, chopped coriander leaves, grated carrot, chopped green chili, salt, and cumin seeds.
- Gradually add boiling water to the mixture while stirring to form a soft, pliable dough.
- Cover the dough with a damp cloth and let it rest for 10 minutes.
- Divide the dough into 4 equal portions and shape each portion into a ball.
- On a clean surface, take one ball of dough and flatten it into a disc about 6 inches in diameter using your palms or a rolling pin.
- Heat a non-stick skillet or tawa over medium heat and add 1/2 tablespoon of oil.
- Carefully place the flattened dough onto the skillet and cook for about 2-3 minutes until golden brown.
- Flip the rotti, drizzle with another 1/2 tablespoon of oil, and cook for another 2-3 minutes until both sides are cooked and slightly crisp.
- Repeat the process for the remaining dough portions.
- Serve the hot Akki Rotti with coconut chutney or yogurt.
