  • Boiling water - 180 ml
  • Chopped onion - 50 grams
  • Chopped coriander leaves - 20 grams
  • Grated carrot - 30 grams
  • Chopped green chili - 1 (adjust to taste)
  • Salt - 1 teaspoon
  • Oil - 2 tablespoons (for cooking)
  • Cumin seeds - 1/2 teaspoon

Steps

  1. In a mixing bowl, combine the rice flour, chopped onion, chopped coriander leaves, grated carrot, chopped green chili, salt, and cumin seeds.
  2. Gradually add boiling water to the mixture while stirring to form a soft, pliable dough.
  3. Cover the dough with a damp cloth and let it rest for 10 minutes.
  4. Divide the dough into 4 equal portions and shape each portion into a ball.
  5. On a clean surface, take one ball of dough and flatten it into a disc about 6 inches in diameter using your palms or a rolling pin.
  6. Heat a non-stick skillet or tawa over medium heat and add 1/2 tablespoon of oil.
  7. Carefully place the flattened dough onto the skillet and cook for about 2-3 minutes until golden brown.
  8. Flip the rotti, drizzle with another 1/2 tablespoon of oil, and cook for another 2-3 minutes until both sides are cooked and slightly crisp.
  9. Repeat the process for the remaining dough portions.
  10. Serve the hot Akki Rotti with coconut chutney or yogurt.
