- Whole wheat flour - 1 cup
- Besan (gram flour) - 1/4 cup
- Karela (bitter gourd) - 1 medium, finely grated
- Yogurt - 2 tablespoons
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1/2 teaspoon
- Cumin powder - 1/2 teaspoon
- Coriander powder - 1 teaspoon
- Salt - to taste
- Oil - for cooking
- Fresh coriander leaves - 2 tablespoons, chopped
- Water - as needed
Steps
- Begin by washing the karela, then cut it in half, remove the seeds, and grate it finely. Sprinkle some salt over the grated karela and let it sit for about 10 minutes to reduce bitterness.
- In a mixing bowl, combine whole wheat flour, besan, turmeric powder, red chili powder, cumin powder, coriander powder, and salt. Mix well.
- After 10 minutes, squeeze out the excess water from the grated karela and add it to the flour mixture along with yogurt and chopped coriander leaves.
- Knead the mixture into a smooth dough, adding water as needed. Cover and let it rest for 10 minutes.
- Divide the dough into 4 equal portions and roll each portion into a ball. Flatten each ball slightly and dust with flour.
- Preheat a tawa or non-stick skillet on medium heat. Roll out each portion into a circle about 6 inches in diameter.
- Place the rolled thepla on the hot tawa and cook for about 1-2 minutes on each side until golden brown, applying a little oil on both sides while cooking.
- Repeat the process for the remaining dough. Serve hot with yogurt or pickle.
