- Bitter gourd (Karela) - 200 grams
- Onion (finely chopped) - 1 medium (100 grams)
- Tomato (chopped) - 1 medium (100 grams)
- Green chili (slit) - 1
- Ginger (grated) - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Coriander powder - 1 teaspoon
- Cumin seeds - 1/2 teaspoon
- Salt - to taste
- Oil (preferably mustard or vegetable oil) - 2 tablespoons
- Fresh coriander leaves (for garnish) - a handful
Steps
- Wash the bitter gourd thoroughly, slice it in half lengthwise, and remove the seeds. Cut into thin half-moon slices.
- Sprinkle salt over the sliced karela and let it rest for 10-15 minutes to reduce bitterness. Rinse the karela slices under running water to remove excess salt.
- Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.
- Add the chopped onions to the pan and sauté until they turn golden brown.
- Stir in the grated ginger and slit green chili, cooking for an additional minute.
- Add the rinsed karela slices to the pan, and stir well to combine with the onion mixture.
- Sprinkle in turmeric powder and coriander powder, mixing thoroughly. Cook for about 10-15 minutes, stirring occasionally, until the karela is tender.
- Add chopped tomatoes, season with salt to taste, and cook for another 5 minutes until the tomatoes soften and blend with the sabzi.
- Turn off the heat and garnish with fresh coriander leaves before serving.
