Ingredients

  • Bitter gourd (Karela) - 200 grams
  • Onion (finely chopped) - 1 medium (100 grams)
  • Tomato (chopped) - 1 medium (100 grams)
  • Green chili (slit) - 1
  • Ginger (grated) - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Coriander powder - 1 teaspoon
  • Cumin seeds - 1/2 teaspoon
  • Salt - to taste
  • Oil (preferably mustard or vegetable oil) - 2 tablespoons
  • Fresh coriander leaves (for garnish) - a handful

Steps

  1. Wash the bitter gourd thoroughly, slice it in half lengthwise, and remove the seeds. Cut into thin half-moon slices.
  2. Sprinkle salt over the sliced karela and let it rest for 10-15 minutes to reduce bitterness. Rinse the karela slices under running water to remove excess salt.
  3. Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.
  4. Add the chopped onions to the pan and sauté until they turn golden brown.
  5. Stir in the grated ginger and slit green chili, cooking for an additional minute.
  6. Add the rinsed karela slices to the pan, and stir well to combine with the onion mixture.
  7. Sprinkle in turmeric powder and coriander powder, mixing thoroughly. Cook for about 10-15 minutes, stirring occasionally, until the karela is tender.
  8. Add chopped tomatoes, season with salt to taste, and cook for another 5 minutes until the tomatoes soften and blend with the sabzi.
  9. Turn off the heat and garnish with fresh coriander leaves before serving.
