Ingredients

  • Bitter melon (karela) - 200 grams
  • Whole wheat flour - 1 cup (120 grams)
  • Cumin seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1/2 teaspoon
  • Salt - 1 teaspoon (or to taste)
  • Water - as needed
  • Oil or ghee - for cooking (1 tablespoon for dough and 2 tablespoons for cooking)

Steps

  1. Wash the bitter melon thoroughly, cut it in half, remove the seeds, and grate it using a grater.
  2. Sprinkle a little salt over the grated karela and let it sit for 10 minutes to release excess water.
  3. After 10 minutes, squeeze out the excess water from the karela and set it aside.
  4. In a mixing bowl, combine the whole wheat flour, cumin seeds, turmeric powder, red chili powder, and salt. Mix well.
  5. Add the grated karela to the flour mixture and mix until well combined.
  6. Gradually add water and knead to form a soft dough. Cover the dough with a damp cloth and let it rest for 10 minutes.
  7. After resting, divide the dough into 4 equal portions. Roll each portion into a ball.
  8. Dust a rolling surface with flour and roll out each ball into a flat disc (about 6 inches in diameter).
  9. Heat a tava or skillet over medium heat. Place the rolled paratha on the hot surface.
  10. Cook for about 1-2 minutes on one side until small bubbles appear, then flip it over.
  11. Apply a little oil or ghee on the cooked side and cook for another 1-2 minutes until golden brown.
  12. Remove from the pan and repeat with the remaining parathas. Serve hot with yogurt or pickle.
