- Fresh coriander leaves (chopped) - 2 tablespoons
Steps
- Wash the karela thoroughly, slice it in half lengthwise, and scoop out the seeds.
- Cut the karela into thin slices and sprinkle with salt and turmeric powder. Set aside for 10 minutes to allow the salt to draw out moisture.
- Heat mustard oil in a pan over medium heat until hot, then add cumin seeds and let them sizzle.
- Add sliced onions and minced garlic to the pan, sautéing until the onions are golden brown.
- Rinse the salted karela slices under cold water to remove excess salt and bitterness, then add them to the pan.
- Sprinkle red chili powder and garam masala over the karela, stirring well to combine.
- Cook for about 15-20 minutes, stirring occasionally, until the karela is tender and slightly crispy.
- Garnish with chopped coriander leaves before serving.
