- Red chili powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Cumin powder - 1/2 teaspoon
- Salt - 1 teaspoon (or to taste)
- Oil (for frying) - 2 tablespoons
- Onion (thinly sliced) - 1 medium
- Garlic (minced) - 2 cloves
- Ginger (grated) - 1 teaspoon
- Lemon juice - 1 tablespoon
- Coriander leaves (for garnish) - a handful
Steps
- Wash the bitter gourd under running water and pat dry. Cut the ends off and slice them thinly (about 1/4 inch thick).
- Place the sliced bitter gourd in a bowl, add turmeric, red chili powder, coriander powder, cumin powder, and salt. Mix well and let it marinate for about 10 minutes.
- Heat oil in a frying pan over medium heat. Add the sliced onions, minced garlic, and grated ginger. Sauté until the onions are translucent.
- Add the marinated bitter gourd to the pan and stir-fry for about 15-20 minutes, or until they turn crispy and golden brown. Stir occasionally to ensure even cooking.
- Once cooked, remove from heat and drizzle with lemon juice. Mix well and garnish with chopped coriander leaves before serving.
