Ingredients

  • Bitter gourd (Karela) - 200 grams
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Cumin powder - 1/2 teaspoon
  • Salt - 1 teaspoon (or to taste)
  • Oil (for frying) - 2 tablespoons
  • Onion (thinly sliced) - 1 medium
  • Garlic (minced) - 2 cloves
  • Ginger (grated) - 1 teaspoon
  • Lemon juice - 1 tablespoon
  • Coriander leaves (for garnish) - a handful

Steps

  1. Wash the bitter gourd under running water and pat dry. Cut the ends off and slice them thinly (about 1/4 inch thick).
  2. Place the sliced bitter gourd in a bowl, add turmeric, red chili powder, coriander powder, cumin powder, and salt. Mix well and let it marinate for about 10 minutes.
  3. Heat oil in a frying pan over medium heat. Add the sliced onions, minced garlic, and grated ginger. Sauté until the onions are translucent.
  4. Add the marinated bitter gourd to the pan and stir-fry for about 15-20 minutes, or until they turn crispy and golden brown. Stir occasionally to ensure even cooking.
  5. Once cooked, remove from heat and drizzle with lemon juice. Mix well and garnish with chopped coriander leaves before serving.
