Steps
- Begin by washing the bitter gourd thoroughly and patting it dry with a kitchen towel.
- Slice the bitter gourd thinly, about 2-3 mm thick. Remove seeds if desired.
- In a large mixing bowl, combine the sliced karela with olive oil, turmeric powder, red chili powder, cumin powder, salt, black pepper, and lemon juice. Toss well to ensure the slices are evenly coated.
- Preheat your oven to 180°C (350°F).
- Spread the seasoned bitter gourd slices on a baking tray lined with parchment paper in a single layer.
- Bake in the preheated oven for about 20 minutes, flipping the slices halfway through to ensure even crispness.
- Once they are golden brown and crispy, remove the tray from the oven and let the chips cool slightly.
- Garnish with freshly chopped coriander before serving.
