Ingredients

  • Black-eyed peas - 100 grams (soaked overnight and cooked)
  • Cucumber - 1 medium, diced
  • Tomato - 1 medium, diced
  • Red onion - 1/2 medium, finely chopped
  • Coriander leaves - 2 tablespoons, chopped
  • Green chili - 1 small, finely chopped (adjust to taste)
  • Lemon juice - 1 tablespoon
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Chaat masala - 1 teaspoon

Steps

  1. Soak the black-eyed peas overnight in water. The next day, drain and boil them in fresh water until tender, about 20 minutes. Drain and set aside to cool.
  2. In a mixing bowl, combine the diced cucumber, tomato, red onion, and chopped coriander leaves.
  3. Add the boiled black-eyed peas to the vegetable mixture.
  4. In a small bowl, whisk together the lemon juice, olive oil, salt, and chaat masala.
  5. Pour the dressing over the salad and toss gently to combine all the ingredients evenly.
  6. Taste and adjust salt or lemon juice if necessary.
  7. Serve immediately, garnished with extra coriander if desired.
