Ingredients

  • Rice flour - 1 cup
  • Split urad dal (black gram) flour - 1/4 cup
  • Water - 1 1/2 cups
  • Salt - 1 tsp
  • Curry leaves - 10 leaves, chopped
  • Green chilies - 1, finely chopped
  • Ginger - 1 tsp, grated
  • Mustard seeds - 1/2 tsp
  • Asafoetida (hing) - a pinch
  • Oil - for cooking

Steps

  1. In a mixing bowl, combine rice flour, urad dal flour, and salt.
  2. Gradually add water to the flour mixture, stirring until you achieve a smooth batter.
  3. In a small pan, heat 1 tsp of oil and add mustard seeds, letting them splutter.
  4. Add chopped green chilies, grated ginger, curry leaves, and asafoetida to the pan and sauté for 1-2 minutes.
  5. Pour the tempered mixture into the dosa batter and mix well.
  6. Heat a non-stick skillet or tawa over medium heat and lightly grease it with oil.
  7. Pour a ladleful of batter onto the skillet, spreading it evenly in a circular motion to form a thin dosa.
  8. Drizzle a little oil around the edges and cook for 3-4 minutes until the dosa is crispy and golden brown.
  9. Flip the dosa and cook for an additional 1-2 minutes on the other side.
  10. Repeat the process with the remaining batter to make additional dosas.
