Ingredients

  • Semolina (rava) - 1 cup
  • Onion - 1 medium, finely chopped
  • Green chilies - 2, slit
  • Ginger - 1 teaspoon, grated
  • Mustard seeds - 1 teaspoon
  • Urad dal (split black gram) - 1 tablespoon
  • Chana dal (split chickpeas) - 1 tablespoon
  • Curry leaves - 8-10 leaves
  • Vegetable oil - 2 tablespoons
  • Salt - to taste
  • Water - 2 cups
  • Fresh coriander leaves - for garnish

Steps

  1. Heat the vegetable oil in a pan over medium heat. Add the mustard seeds and let them splutter.
  2. Add the urad dal and chana dal to the pan, and sauté until they turn golden brown.
  3. Stir in the chopped onions, green chilies, and grated ginger. Cook until the onions become translucent.
  4. Add the curry leaves and salt, mixing well.
  5. In a separate pot, bring 2 cups of water to a boil.
  6. Once the onions are cooked, reduce the heat and slowly add the semolina to the pan, stirring continuously to avoid lumps.
  7. Gradually pour in the boiling water while stirring, ensuring an even consistency.
  8. Cover the pan and let it cook on low heat for about 5-7 minutes until the semolina absorbs the water and becomes fluffy.
  9. Fluff the upma with a fork, garnish with fresh coriander leaves, and serve hot.
