- Semolina (rava) - 1 cup

- Urad dal (split black gram) - 1 tablespoon
- Chana dal (split chickpeas) - 1 tablespoon
- Curry leaves - 8-10 leaves
- Vegetable oil - 2 tablespoons
- Salt - to taste
- Water - 2 cups
- Fresh coriander leaves - for garnish
Steps
- Heat the vegetable oil in a pan over medium heat. Add the mustard seeds and let them splutter.
- Add the urad dal and chana dal to the pan, and sauté until they turn golden brown.
- Stir in the chopped onions, green chilies, and grated ginger. Cook until the onions become translucent.
- Add the curry leaves and salt, mixing well.
- In a separate pot, bring 2 cups of water to a boil.
- Once the onions are cooked, reduce the heat and slowly add the semolina to the pan, stirring continuously to avoid lumps.
- Gradually pour in the boiling water while stirring, ensuring an even consistency.
- Cover the pan and let it cook on low heat for about 5-7 minutes until the semolina absorbs the water and becomes fluffy.
- Fluff the upma with a fork, garnish with fresh coriander leaves, and serve hot.
