Ingredients

  • Flattened rice - 2 cups
  • Onion - 1 medium, finely chopped
  • Green chili - 1, slit
  • Mustard seeds - 1 tsp
  • Turmeric powder - 1/2 tsp
  • Peanuts - 1/4 cup
  • Curry leaves - 8-10
  • Salt - to taste
  • Lemon juice - 1 tbsp
  • Coriander leaves - for garnish
  • Oil - 2 tbsp

Steps

  1. Rinse the flattened rice in water and drain it. Set aside.
  2. Heat oil in a pan and add mustard seeds. Let them splutter.
  3. Add peanuts and sauté until they are golden brown.
  4. Add curry leaves and green chili, and sauté for a minute.
  5. Add chopped onions and cook until they are translucent.
  6. Stir in turmeric powder and salt, mixing well.
  7. Add the rinsed flattened rice to the pan and mix gently.
  8. Cook for 2-3 minutes, stirring occasionally, to heat through.
  9. Remove from heat and add lemon juice. Mix well.
  10. Garnish with chopped coriander leaves and serve hot.
