Ingredients
- Flattened rice - 2 cups
- Onion - 1 medium, finely chopped
- Green chili - 1, slit
- Mustard seeds - 1 tsp
- Turmeric powder - 1/2 tsp
- Peanuts - 1/4 cup
- Curry leaves - 8-10
- Salt - to taste
- Lemon juice - 1 tbsp
- Coriander leaves - for garnish
- Oil - 2 tbsp
Steps
- Rinse the flattened rice in water and drain it. Set aside.
- Heat oil in a pan and add mustard seeds. Let them splutter.
- Add peanuts and sauté until they are golden brown.
- Add curry leaves and green chili, and sauté for a minute.
- Add chopped onions and cook until they are translucent.
- Stir in turmeric powder and salt, mixing well.
- Add the rinsed flattened rice to the pan and mix gently.
- Cook for 2-3 minutes, stirring occasionally, to heat through.
- Remove from heat and add lemon juice. Mix well.
- Garnish with chopped coriander leaves and serve hot.
