Ingredients
- Basmati rice - 150 grams
- Water - 400 ml
- Kalonji seeds - 1 teaspoon
- Cumin seeds - 1 teaspoon
- Mustard seeds - 1/2 teaspoon
- Turmeric powder - 1/2 teaspoon
- Ginger - 1-inch piece, grated
- Garlic - 2 cloves, minced
- Green chili - 1, slit
- Onion - 1 medium, thinly sliced
- Cilantro - a handful, chopped
- Salt - to taste
- Oil (coconut or vegetable) - 2 tablespoons
- Lemon juice - 1 tablespoon
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
- In a pot, heat the oil over medium heat and add the kalonji seeds, cumin seeds, and mustard seeds. Sauté for about 30 seconds until they start to crackle.
- Add the sliced onion and sauté until they turn golden brown, about 5-7 minutes.
- Stir in the grated ginger, minced garlic, and slit green chili. Cook for an additional 2 minutes until fragrant.
- Add turmeric powder and salt to the mixture, followed by the drained basmati rice. Stir gently to coat the rice with the spices.
- Pour in 400 ml of water and bring to a boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer for 15 minutes or until the rice is cooked and water is absorbed.
- Remove from heat and let it sit covered for another 5 minutes. Fluff the rice with a fork.
- Drizzle lemon juice over the rice and garnish with chopped cilantro before serving.
