Ingredients

  • Basmati rice - 150 grams
  • Water - 400 ml
  • Kalonji seeds - 1 teaspoon
  • Cumin seeds - 1 teaspoon
  • Mustard seeds - 1/2 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Ginger - 1-inch piece, grated
  • Garlic - 2 cloves, minced
  • Green chili - 1, slit
  • Onion - 1 medium, thinly sliced
  • Cilantro - a handful, chopped
  • Salt - to taste
  • Oil (coconut or vegetable) - 2 tablespoons
  • Lemon juice - 1 tablespoon

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
  2. In a pot, heat the oil over medium heat and add the kalonji seeds, cumin seeds, and mustard seeds. Sauté for about 30 seconds until they start to crackle.
  3. Add the sliced onion and sauté until they turn golden brown, about 5-7 minutes.
  4. Stir in the grated ginger, minced garlic, and slit green chili. Cook for an additional 2 minutes until fragrant.
  5. Add turmeric powder and salt to the mixture, followed by the drained basmati rice. Stir gently to coat the rice with the spices.
  6. Pour in 400 ml of water and bring to a boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer for 15 minutes or until the rice is cooked and water is absorbed.
  7. Remove from heat and let it sit covered for another 5 minutes. Fluff the rice with a fork.
  8. Drizzle lemon juice over the rice and garnish with chopped cilantro before serving.
