Ingredients

  • Lamb liver - 300 grams, cleaned and chopped
  • Onion - 1 medium, finely chopped
  • Ginger-garlic paste - 1 tablespoon
  • Tomato - 1 medium, pureed
  • Green chili - 1, slit
  • Cumin seeds - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Garam masala - 1/2 teaspoon
  • Salt - to taste
  • Fresh coriander leaves - a handful, chopped
  • Lemon juice - 1 tablespoon
  • Water - 4 cups
  • Cooking oil - 2 tablespoons

Steps

  1. Heat oil in a pot over medium heat. Add cumin seeds and let them splutter.
  2. Add the chopped onions and sauté until they turn golden brown.
  3. Stir in the ginger-garlic paste and green chili, cooking for another 2 minutes until fragrant.
  4. Add the pureed tomato and cook for about 5 minutes until the oil separates.
  5. Mix in the coriander powder, turmeric powder, and salt, stirring well.
  6. Add the chopped liver to the pot, cooking until it changes color, about 5-7 minutes.
  7. Pour in the water, bring to a boil, then reduce the heat and simmer for 10 minutes.
  8. Sprinkle garam masala and chopped coriander leaves into the soup, and stir well.
  9. Remove from heat, add lemon juice, and adjust seasoning as needed.
  10. Serve hot, garnished with additional coriander if desired.
