Ingredients

  • Kale - 200 grams, chopped
  • Onion - 1 medium, finely chopped
  • Garlic - 3 cloves, minced
  • Ginger - 1 inch, grated
  • Tomato - 1 medium, chopped
  • Green chili - 1, slit
  • Vegetable broth - 500 ml
  • Coconut milk - 100 ml
  • Cumin seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Coriander powder - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon
  • Olive oil - 1 tablespoon
  • Fresh cilantro - for garnish

Steps

  1. Heat the olive oil in a pot over medium heat. Add cumin seeds and let them splutter.
  2. Add the chopped onion, garlic, and ginger. Sauté until the onion turns translucent.
  3. Stir in the chopped tomato and green chili. Cook for about 5 minutes until the tomato softens.
  4. Add turmeric powder, coriander powder, and salt. Mix well and cook for another minute.
  5. Add the chopped kale and sauté for 2-3 minutes until it wilts.
  6. Pour in the vegetable broth and bring to a boil. Reduce heat and let it simmer for 10 minutes.
  7. Stir in the coconut milk and simmer for an additional 5 minutes.
  8. Adjust seasoning with black pepper and lemon juice. Remove from heat.
  9. Serve hot, garnished with fresh cilantro.
