- Kale - 200 grams, chopped

- Garlic - 3 cloves, minced
- Ginger - 1 inch, grated
- Tomato - 1 medium, chopped
- Green chili - 1, slit
- Vegetable broth - 500 ml
- Coconut milk - 100 ml
- Cumin seeds - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Coriander powder - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Lemon juice - 1 tablespoon
- Olive oil - 1 tablespoon
- Fresh cilantro - for garnish
Steps
- Heat the olive oil in a pot over medium heat. Add cumin seeds and let them splutter.
- Add the chopped onion, garlic, and ginger. Sauté until the onion turns translucent.
- Stir in the chopped tomato and green chili. Cook for about 5 minutes until the tomato softens.
- Add turmeric powder, coriander powder, and salt. Mix well and cook for another minute.
- Add the chopped kale and sauté for 2-3 minutes until it wilts.
- Pour in the vegetable broth and bring to a boil. Reduce heat and let it simmer for 10 minutes.
- Stir in the coconut milk and simmer for an additional 5 minutes.
- Adjust seasoning with black pepper and lemon juice. Remove from heat.
- Serve hot, garnished with fresh cilantro.
