Ingredients

  • Ground lamb - 250 grams
  • Ground chicken - 250 grams
  • Onion, finely grated - 1 medium (about 100 grams)
  • Garlic paste - 1 tablespoon
  • Ginger paste - 1 tablespoon
  • Green chilies, finely chopped - 1-2 (to taste)
  • Cilantro leaves, chopped - 2 tablespoons
  • Mint leaves, chopped - 2 tablespoons
  • Garam masala - 1 teaspoon
  • Cumin powder - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper powder - 1/2 teaspoon
  • Almond flour - 2 tablespoons
  • Egg - 1, beaten
  • Cooking oil - for greasing

Steps

  1. In a large mixing bowl, combine the ground lamb and chicken with the grated onion, garlic paste, ginger paste, green chilies, cilantro, mint leaves, garam masala, cumin powder, salt, and black pepper.
  2. Mix the ingredients thoroughly until well combined, then add the almond flour and beaten egg to the mixture. Mix again until the mixture is cohesive.
  3. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld and the mixture to firm up.
  4. Preheat your grill or barbecue to medium-high heat and lightly grease the grill grates with cooking oil.
  5. Shape the marinated meat mixture into elongated kebabs, about 10-12 cm long, and place them on the grill.
  6. Cook the kebabs for 5-7 minutes on each side, or until they are cooked through and have a nice char, ensuring to turn them gently to avoid breaking.
  7. Once cooked, remove the kebabs from the grill and let them rest for a few minutes before serving.
