- Cashew nuts - 150 grams
- Sugar - 75 grams
- Water - 50 ml
- Cardamom powder - 1/2 teaspoon
- Ghee (clarified butter) - 1 tablespoon
- Edible silver leaf (varak) - for decoration
- Chopped pistachios - for garnish
Steps
- Soak the cashew nuts in water for 2 hours, then drain them.
- Blend the soaked cashew nuts into a smooth paste, adding a little water if necessary.
- In a pan, combine the sugar and 50 ml of water, and heat it over medium flame until the sugar dissolves completely.
- Add the cashew paste to the sugar syrup, and mix well to combine.
- Stir in the cardamom powder and ghee, and cook the mixture on low flame, stirring continuously until it thickens and starts to leave the sides of the pan, about 10-15 minutes.
- Remove the mixture from heat and let it cool slightly.
- Once cool enough to handle, knead the mixture gently until smooth.
- Grease your hands with a little ghee and divide the mixture into two equal portions.
- Roll each portion into a log shape, then flatten it slightly.
- Place a sheet of edible silver leaf over each roll for decoration, and gently press down to adhere.
- Garnish with chopped pistachios on top.
- Allow the Kaju Rolls to cool completely before slicing into bite-sized pieces.
