Ingredients

  • Yogurt - 200 grams
  • Besan (gram flour) - 3 tablespoons
  • Turmeric powder - 1/2 teaspoon
  • Salt - to taste
  • Water - 4 cups
  • Mustard seeds - 1/2 teaspoon
  • Cumin seeds - 1/2 teaspoon
  • Fenugreek seeds - 1/4 teaspoon
  • Curry leaves - 10 leaves
  • Green chili - 1, slit
  • Ginger - 1 inch, grated
  • Garlic - 2 cloves, minced
  • Oil - 1 tablespoon
  • Basmati rice - 1 cup
  • Papad - 2 pieces

Steps

  1. In a bowl, whisk together the yogurt, besan, turmeric powder, and salt until smooth.
  2. Gradually add water to the yogurt mixture, whisking to combine, and set aside.
  3. In a pot, heat oil over medium heat. Add mustard seeds, cumin seeds, fenugreek seeds, and let them splutter.
  4. Add curry leaves, green chili, ginger, and garlic, and sauté for 1-2 minutes until fragrant.
  5. Pour in the yogurt-besan mixture and stir continuously to avoid lumps. Cook on medium heat for 15-20 minutes until it thickens slightly.
  6. Simultaneously, rinse the basmati rice under cold water until the water runs clear. Cook rice in 2 cups of water in a separate pot, bringing it to a boil, then reduce to low heat, cover, and let simmer for 15 minutes until done.
  7. In the last few minutes of cooking the kadhi, adjust the seasoning with salt and remove from heat.
  8. Roast the papad over an open flame or microwave until crispy.
  9. Serve the kadhi hot with steamed basmati rice and crispy papad on the side.
