- Yogurt - 200 grams
- Besan (gram flour) - 3 tablespoons
- Turmeric powder - 1/2 teaspoon
- Salt - to taste
- Water - 4 cups
- Mustard seeds - 1/2 teaspoon
- Cumin seeds - 1/2 teaspoon
- Fenugreek seeds - 1/4 teaspoon
- Curry leaves - 10 leaves
- Green chili - 1, slit
- Ginger - 1 inch, grated
- Garlic - 2 cloves, minced
- Oil - 1 tablespoon
- Basmati rice - 1 cup
- Papad - 2 pieces
Steps
- In a bowl, whisk together the yogurt, besan, turmeric powder, and salt until smooth.
- Gradually add water to the yogurt mixture, whisking to combine, and set aside.
- In a pot, heat oil over medium heat. Add mustard seeds, cumin seeds, fenugreek seeds, and let them splutter.
- Add curry leaves, green chili, ginger, and garlic, and sauté for 1-2 minutes until fragrant.
- Pour in the yogurt-besan mixture and stir continuously to avoid lumps. Cook on medium heat for 15-20 minutes until it thickens slightly.
- Simultaneously, rinse the basmati rice under cold water until the water runs clear. Cook rice in 2 cups of water in a separate pot, bringing it to a boil, then reduce to low heat, cover, and let simmer for 15 minutes until done.
- In the last few minutes of cooking the kadhi, adjust the seasoning with salt and remove from heat.
- Roast the papad over an open flame or microwave until crispy.
- Serve the kadhi hot with steamed basmati rice and crispy papad on the side.
