- Yogurt - 250 grams
- Besan (gram flour) - 100 grams
- Water - 500 ml
- Turmeric powder - 1 teaspoon
- Red chili powder - 1 teaspoon
- Garam masala - 1 teaspoon
- Cumin seeds - 1 teaspoon
- Coriander powder - 1 teaspoon
- Salt - 1 teaspoon
- Cooking oil - 3 tablespoons
- Ginger - 1 inch (grated)
- Green chilies - 2 (chopped)
- Curry leaves - 8-10
- Onion - 1 small (finely chopped)
- Fresh coriander leaves - a handful (for garnish)
Steps
- In a bowl, whisk the yogurt until smooth. Add water gradually to make a thin batter, then mix in turmeric, red chili powder, coriander powder, and salt.
- In a pan, heat 1 tablespoon of oil over medium heat. Add cumin seeds and allow them to sizzle. Then, add the chopped onion and sauté until golden brown.
- Add the grated ginger, green chilies, and curry leaves to the pan. Sauté for another minute until fragrant.
- Pour the yogurt mixture into the pan and stir continuously to avoid curdling. Bring it to a gentle boil, then reduce the heat and let it simmer for about 15-20 minutes.
- Meanwhile, prepare the pakoras: In a separate bowl, mix besan, turmeric, red chili powder, and salt. Add water gradually to form a thick batter.
- In a frying pan, heat the remaining oil for frying. Once hot, drop spoonfuls of the besan batter into the oil to form fritters. Fry until golden and crispy, then drain on paper towels.
- Once the kadhi has thickened, sprinkle garam masala and adjust salt to taste. Remove from heat.
- Serve the kadhi hot, topped with fresh coriander leaves and accompanied by the crispy pakoras on the side.
