- Plain yogurt - 200 grams
- Besan (gram flour) - 2 tablespoons
- Water - 500 ml
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1/2 teaspoon
- Ginger paste - 1 teaspoon
- Green chili - 1, slit
- Curry leaves - 8-10 leaves
- Mustard seeds - 1 teaspoon
- Cumin seeds - 1/2 teaspoon
- Salt - to taste
- Oil - 1 tablespoon
- Fresh coriander - for garnish
Steps
- In a mixing bowl, whisk together the plain yogurt, besan, turmeric powder, red chili powder, and salt until smooth.
- Gradually add water to the mixture while continuously whisking to prevent lumps.
- In a pot, heat oil over medium heat and add mustard seeds and cumin seeds. Allow them to splutter.
- Add the ginger paste, slit green chili, and curry leaves. Sauté for 1-2 minutes until fragrant.
- Pour the yogurt-besan mixture into the pot and stir well. Bring it to a gentle boil, then reduce the heat to low.
- Simmer for about 15-20 minutes, stirring occasionally, until the soup thickens slightly.
- Taste and adjust the seasoning if necessary. Remove from heat.
- Serve hot, garnished with fresh coriander.
