- Yogurt - 200 grams
- Besan (gram flour) - 2 tablespoons
- Water - 200 ml
- Turmeric powder - 1/2 teaspoon
- Salt - to taste
- Cucumber - 1 small, diced
- Tomato - 1 medium, diced
- Red onion - 1 small, finely chopped
- Green chili - 1, finely chopped (optional)
- Fresh coriander leaves - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Roasted cumin powder - 1/2 teaspoon
- Black pepper - to taste
Steps
- In a bowl, whisk together the yogurt, besan, turmeric powder, and salt until smooth.
- Gradually add water to the mixture, stirring continuously to avoid lumps.
- Transfer the mixture to a saucepan and cook over medium heat, stirring continuously until it thickens (about 10-15 minutes).
- Once thickened, remove from heat and let it cool to room temperature.
- In a large mixing bowl, combine the diced cucumber, tomato, red onion, green chili, and coriander leaves.
- Add the cooled kadhi mixture to the salad bowl and mix well.
- Drizzle with lemon juice, sprinkle roasted cumin powder and black pepper on top, and toss to combine.
- Serve chilled or at room temperature.
