Ingredients

  • Yogurt - 200 grams
  • Besan (gram flour) - 2 tablespoons
  • Water - 200 ml
  • Turmeric powder - 1/2 teaspoon
  • Salt - to taste
  • Cucumber - 1 small, diced
  • Tomato - 1 medium, diced
  • Red onion - 1 small, finely chopped
  • Green chili - 1, finely chopped (optional)
  • Fresh coriander leaves - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Roasted cumin powder - 1/2 teaspoon
  • Black pepper - to taste

Steps

  1. In a bowl, whisk together the yogurt, besan, turmeric powder, and salt until smooth.
  2. Gradually add water to the mixture, stirring continuously to avoid lumps.
  3. Transfer the mixture to a saucepan and cook over medium heat, stirring continuously until it thickens (about 10-15 minutes).
  4. Once thickened, remove from heat and let it cool to room temperature.
  5. In a large mixing bowl, combine the diced cucumber, tomato, red onion, green chili, and coriander leaves.
  6. Add the cooled kadhi mixture to the salad bowl and mix well.
  7. Drizzle with lemon juice, sprinkle roasted cumin powder and black pepper on top, and toss to combine.
  8. Serve chilled or at room temperature.
