- Plain yogurt - 400 grams
- Besan (gram flour) - 2 tablespoons
- Water - 500 ml
- Paneer - 150 grams, cubed
- Mustard seeds - 1 teaspoon
- Cumin seeds - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1 teaspoon
- Garam masala - 1/2 teaspoon
- Salt - to taste
- Curry leaves - 8-10 leaves
- Cilantro (coriander leaves) - for garnish
- Oil - 1 tablespoon
Steps
- In a bowl, whisk together the yogurt, besan, and water until smooth. Set aside.
- Heat oil in a pan over medium heat. Add mustard seeds and cumin seeds, and let them splutter.
- Add curry leaves and sauté for a few seconds until fragrant.
- Pour the yogurt mixture into the pan and stir continuously to avoid lumps. Cook for 10-15 minutes until the mixture thickens.
- Add turmeric powder, red chili powder, and salt. Mix well and let it simmer for another 5 minutes.
- Gently add the cubed paneer and garam masala to the kadhi. Stir to coat the paneer with the sauce and cook for an additional 5 minutes.
- Remove from heat and garnish with chopped cilantro before serving.
