Ingredients
- Yogurt - 200 grams
- Besan (gram flour) - 50 grams
- Water - 750 ml
- Turmeric powder - 1 teaspoon
- Cumin seeds - 1 teaspoon
- Mustard seeds - 1/2 teaspoon
- Ginger - 1 inch (grated)
- Green chili - 1 (finely chopped)
- Salt - to taste
- Oil - 2 tablespoons
- Onion - 1 small (finely chopped)
- Coriander leaves - for garnish
- Lemon juice - 1 tablespoon
Steps
- In a bowl, whisk the yogurt until smooth. Add 500 ml of water, turmeric powder, and salt. Mix well and set aside.
- In a separate bowl, mix besan, a pinch of salt, and enough water to form a thick batter. Stir in chopped green chili and grated ginger.
- Heat oil in a pan. Drop spoonfuls of the besan batter into the hot oil and fry until golden brown. Remove and drain on paper towels.
- In a pot, heat 1 tablespoon of oil. Add cumin seeds and mustard seeds. Once they splutter, add chopped onions and sauté until translucent.
- Pour the yogurt mixture into the pot and bring it to a gentle boil. Stir continuously to prevent curdling.
- Add the fried pakoras into the kadhi and let it simmer for about 10 minutes.
- Finish with a squeeze of lemon juice and garnish with fresh coriander leaves before serving.
