Ingredients

  • Yogurt - 200 grams
  • Besan (gram flour) - 50 grams
  • Water - 750 ml
  • Turmeric powder - 1 teaspoon
  • Cumin seeds - 1 teaspoon
  • Mustard seeds - 1/2 teaspoon
  • Ginger - 1 inch (grated)
  • Green chili - 1 (finely chopped)
  • Salt - to taste
  • Oil - 2 tablespoons
  • Onion - 1 small (finely chopped)
  • Coriander leaves - for garnish
  • Lemon juice - 1 tablespoon

Steps

  1. In a bowl, whisk the yogurt until smooth. Add 500 ml of water, turmeric powder, and salt. Mix well and set aside.
  2. In a separate bowl, mix besan, a pinch of salt, and enough water to form a thick batter. Stir in chopped green chili and grated ginger.
  3. Heat oil in a pan. Drop spoonfuls of the besan batter into the hot oil and fry until golden brown. Remove and drain on paper towels.
  4. In a pot, heat 1 tablespoon of oil. Add cumin seeds and mustard seeds. Once they splutter, add chopped onions and sauté until translucent.
  5. Pour the yogurt mixture into the pot and bring it to a gentle boil. Stir continuously to prevent curdling.
  6. Add the fried pakoras into the kadhi and let it simmer for about 10 minutes.
  7. Finish with a squeeze of lemon juice and garnish with fresh coriander leaves before serving.
