Ingredients

  • Chickpea flour (besan) - 100 grams
  • Greek yogurt - 200 grams
  • Spinach (chopped) - 50 grams
  • Onion (finely chopped) - 50 grams
  • Green chili (finely chopped) - 1
  • Ginger-garlic paste - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Salt - 1 teaspoon
  • Baking powder - 1/2 teaspoon
  • Water - 200 ml
  • Oil (for greasing) - 1 tablespoon
  • Cilantro (for garnish) - a handful

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a bowl, mix chickpea flour, chopped spinach, onion, green chili, ginger-garlic paste, turmeric, cumin, coriander, salt, and baking powder.
  3. Gradually add water to the mixture, stirring until you have a smooth batter. Let it rest for 10 minutes.
  4. In a baking dish, grease the bottom with oil and pour half of the yogurt into it, spreading it evenly.
  5. Spoon dollops of the chickpea flour batter over the yogurt layer, ensuring even spacing.
  6. Cover the batter with the remaining yogurt, spreading it evenly over the top.
  7. Bake in the preheated oven for 30 minutes, or until the top is slightly golden and firm to the touch.
  8. Remove from the oven and let it cool for a few minutes before garnishing with chopped cilantro.
  9. Serve hot with a side of rice or flatbread.
