- Yogurt - 200 grams
- Besan (gram flour) - 60 grams
- Water - 500 ml
- Turmeric powder - 1 teaspoon
- Red chili powder - 1 teaspoon
- Cumin seeds - 1 teaspoon
- Ginger - 1 inch, grated
- Green chili - 1, finely chopped
- Coriander powder - 1 teaspoon
- Salt - to taste
- Fresh coriander leaves - for garnish
- Oil - 1 tablespoon (for frying)
- Asafoetida (hing) - a pinch
Steps
- In a bowl, whisk the yogurt until smooth. Add turmeric powder, red chili powder, coriander powder, and salt to the yogurt and mix well.
- In a separate bowl, mix gram flour (besan) with salt, red chili powder, and a pinch of asafoetida. Gradually add water to form a smooth batter.
- Heat oil in a pan over medium heat. Once hot, drop spoonfuls of the gram flour batter into the oil and fry until golden brown. Remove and drain on paper towels.
- In a pot, heat a tablespoon of oil. Add cumin seeds, grated ginger, and chopped green chili. Sauté for a minute until fragrant.
- Add the yogurt mixture to the pot, stirring continuously to prevent curdling. Bring it to a gentle boil and simmer for 10 minutes, stirring occasionally.
- Add the fried pakoras (fritters) to the kadhi and let it simmer for another 5 minutes.
- Garnish with fresh coriander leaves and serve hot with steamed rice or roti.
