- Yogurt - 200 grams
- Besan (gram flour) - 50 grams
- Water - 500 ml
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1 teaspoon
- Salt - 1 teaspoon
- Cumin seeds - 1/2 teaspoon
- Mustard seeds - 1/2 teaspoon
- Asafoetida (hing) - a pinch
- Ginger (grated) - 1 teaspoon
- Green chili (slit) - 1
- Curry leaves - 8-10 leaves
- Oil - 2 tablespoons
- Fresh coriander leaves (for garnish) - a handful
Steps
- In a mixing bowl, whisk the yogurt until smooth, then add the besan, turmeric powder, red chili powder, and salt. Mix well until there are no lumps.
- Slowly add water to the yogurt mixture while continuously whisking to create a smooth batter.
- In a saucepan, heat 1 tablespoon of oil over medium heat. Add cumin seeds and mustard seeds, and let them splutter.
- Add the asafoetida, grated ginger, and green chili to the pan. Sauté for about 1 minute until fragrant.
- Pour the yogurt mixture into the pan and stir well. Bring it to a boil, then reduce the heat to low and simmer for 15-20 minutes, stirring occasionally.
- In a separate pan, heat the remaining tablespoon of oil. Add curry leaves and sauté until they are crisp.
- Once the Kadhi has thickened to your desired consistency, pour the tempering of curry leaves over it and mix well.
- Serve hot, garnished with fresh coriander leaves, alongside steamed rice.
