Ingredients

  • Yogurt - 200 grams
  • Besan (gram flour) - 50 grams
  • Water - 500 ml
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1 teaspoon
  • Salt - 1 teaspoon
  • Cumin seeds - 1/2 teaspoon
  • Mustard seeds - 1/2 teaspoon
  • Asafoetida (hing) - a pinch
  • Ginger (grated) - 1 teaspoon
  • Green chili (slit) - 1
  • Curry leaves - 8-10 leaves
  • Oil - 2 tablespoons
  • Fresh coriander leaves (for garnish) - a handful

Steps

  1. In a mixing bowl, whisk the yogurt until smooth, then add the besan, turmeric powder, red chili powder, and salt. Mix well until there are no lumps.
  2. Slowly add water to the yogurt mixture while continuously whisking to create a smooth batter.
  3. In a saucepan, heat 1 tablespoon of oil over medium heat. Add cumin seeds and mustard seeds, and let them splutter.
  4. Add the asafoetida, grated ginger, and green chili to the pan. Sauté for about 1 minute until fragrant.
  5. Pour the yogurt mixture into the pan and stir well. Bring it to a boil, then reduce the heat to low and simmer for 15-20 minutes, stirring occasionally.
  6. In a separate pan, heat the remaining tablespoon of oil. Add curry leaves and sauté until they are crisp.
  7. Once the Kadhi has thickened to your desired consistency, pour the tempering of curry leaves over it and mix well.
  8. Serve hot, garnished with fresh coriander leaves, alongside steamed rice.
