Ingredients

  • Yogurt - 200 grams
  • Chickpea flour (besan) - 100 grams
  • Turmeric powder - 1 teaspoon
  • Cumin seeds - 1 teaspoon
  • Mustard seeds - 1 teaspoon
  • Green chili - 1, finely chopped
  • Ginger - 1-inch piece, grated
  • Curry leaves - 8-10 leaves
  • Asafoetida (hing) - a pinch
  • Salt - to taste
  • Water - 800 ml
  • Oil - 1 tablespoon
  • Fresh coriander leaves - for garnish

Steps

  1. In a bowl, whisk the yogurt until smooth and add 600 ml of water, mixing well to create a uniform mixture.
  2. In a pot, heat 1 tablespoon of oil over medium heat and add mustard seeds. Once they start to crackle, add cumin seeds, curry leaves, green chili, ginger, and a pinch of asafoetida; sauté for 1-2 minutes.
  3. Add the yogurt mixture to the pot and bring it to a gentle simmer, stirring continuously to prevent curdling.
  4. In a separate bowl, combine chickpea flour, turmeric powder, and salt. Gradually add water (about 200 ml) to make a smooth batter.
  5. Once the yogurt mixture is simmering, drop spoonfuls of the chickpea batter into the pot. Cook for about 15-20 minutes on low heat, allowing the dhoklis to cook through.
  6. Check for seasoning and adjust salt as needed. Once the dhoklis are cooked and the curry is thickened, remove from heat.
  7. Garnish with fresh coriander leaves and serve hot with steamed rice or roti.
