Ingredients

  • Chickpea flour (besan) - 1 cup
  • Yogurt - 1/2 cup
  • Water - 1/2 cup
  • Turmeric powder - 1/2 teaspoon
  • Green chili (finely chopped) - 1 small
  • Ginger (grated) - 1 teaspoon
  • Salt - 1 teaspoon
  • Eno fruit salt - 1/2 teaspoon
  • Mustard seeds - 1 teaspoon
  • Curry leaves - 8-10 leaves
  • Coriander leaves (chopped) - for garnish
  • Oil - 1 tablespoon

Steps

  1. In a mixing bowl, combine the chickpea flour, yogurt, turmeric powder, green chili, ginger, salt, and water. Mix well to form a smooth batter.
  2. Allow the batter to rest for 10 minutes while you prepare the kadhi.
  3. In a small saucepan, heat 2 cups of water. Once boiling, add the Eno fruit salt to the batter and mix gently. The batter will become airy and light.
  4. Grease a steaming tray or a plate and pour the batter into it, spreading it evenly.
  5. Place the tray in the steamer and steam for about 15-20 minutes, or until a toothpick inserted comes out clean.
  6. While the dhokla is steaming, prepare the kadhi. In a bowl, whisk together yogurt, 1 cup water, and a pinch of salt. In a pan, heat 1 tablespoon of oil.
  7. Add mustard seeds and curry leaves to the hot oil and let them splutter. Pour the yogurt mixture into the pan and bring it to a gentle boil. Simmer for 5-7 minutes.
  8. Once the dhokla is done, remove it from the steamer and let it cool slightly. Cut into squares.
  9. Serve the dhokla warm with the kadhi poured over it, garnished with chopped coriander leaves.
