Kadhi Dhokla

- Chickpea flour (besan) - 1 cup
- Yogurt - 1/2 cup
- Water - 1/2 cup
- Turmeric powder - 1/2 teaspoon
- Green chili (finely chopped) - 1 small
- Ginger (grated) - 1 teaspoon
- Salt - 1 teaspoon
- Eno fruit salt - 1/2 teaspoon
- Mustard seeds - 1 teaspoon
- Curry leaves - 8-10 leaves
- Coriander leaves (chopped) - for garnish
- Oil - 1 tablespoon
Steps
- In a mixing bowl, combine the chickpea flour, yogurt, turmeric powder, green chili, ginger, salt, and water. Mix well to form a smooth batter.
- Allow the batter to rest for 10 minutes while you prepare the kadhi.
- In a small saucepan, heat 2 cups of water. Once boiling, add the Eno fruit salt to the batter and mix gently. The batter will become airy and light.
- Grease a steaming tray or a plate and pour the batter into it, spreading it evenly.
- Place the tray in the steamer and steam for about 15-20 minutes, or until a toothpick inserted comes out clean.
- While the dhokla is steaming, prepare the kadhi. In a bowl, whisk together yogurt, 1 cup water, and a pinch of salt. In a pan, heat 1 tablespoon of oil.
- Add mustard seeds and curry leaves to the hot oil and let them splutter. Pour the yogurt mixture into the pan and bring it to a gentle boil. Simmer for 5-7 minutes.
- Once the dhokla is done, remove it from the steamer and let it cool slightly. Cut into squares.
- Serve the dhokla warm with the kadhi poured over it, garnished with chopped coriander leaves.
