Ingredients

  • Yogurt - 250 grams
  • Besan (gram flour) - 2 tablespoons
  • Water - 500 ml
  • Turmeric powder - 1/2 teaspoon
  • Salt - to taste
  • Cumin seeds - 1 teaspoon
  • Mustard seeds - 1 teaspoon
  • Green chili - 1, finely chopped
  • Ginger - 1 inch, grated
  • Coriander leaves - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Cilantro chutney - 2 tablespoons
  • Ghee or oil - 1 tablespoon

Steps

  1. In a bowl, whisk together the yogurt and besan until smooth.
  2. Gradually add water, stirring continuously to avoid lumps, and mix in turmeric and salt.
  3. In a pot, heat ghee or oil over medium heat, then add cumin seeds and mustard seeds. Let them splutter.
  4. Add the grated ginger and chopped green chili, sautéing for 1-2 minutes until fragrant.
  5. Pour in the yogurt-besan mixture and bring it to a gentle simmer, stirring frequently to prevent sticking.
  6. Cook for about 15-20 minutes until the soup thickens slightly.
  7. Stir in cilantro chutney and lemon juice, adjusting salt to taste.
  8. Remove from heat and garnish with chopped coriander leaves before serving.
