- Besan (gram flour) - 2 tablespoons
- Water - 500 ml
- Turmeric powder - 1/2 teaspoon
- Salt - to taste
- Cumin seeds - 1 teaspoon
- Mustard seeds - 1 teaspoon
- Green chili - 1, finely chopped
- Ginger - 1 inch, grated
- Coriander leaves - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Cilantro chutney - 2 tablespoons
- Ghee or oil - 1 tablespoon
Steps
- In a bowl, whisk together the yogurt and besan until smooth.
- Gradually add water, stirring continuously to avoid lumps, and mix in turmeric and salt.
- In a pot, heat ghee or oil over medium heat, then add cumin seeds and mustard seeds. Let them splutter.
- Add the grated ginger and chopped green chili, sautéing for 1-2 minutes until fragrant.
- Pour in the yogurt-besan mixture and bring it to a gentle simmer, stirring frequently to prevent sticking.
- Cook for about 15-20 minutes until the soup thickens slightly.
- Stir in cilantro chutney and lemon juice, adjusting salt to taste.
- Remove from heat and garnish with chopped coriander leaves before serving.
