- Yogurt - 250 grams
- Besan (Gram Flour) - 50 grams
- Turmeric Powder - 1 teaspoon
- Red Chili Powder - 1 teaspoon
- Ginger Paste - 1 teaspoon
- Curry Leaves - 8-10 leaves
- Mustard Seeds - 1 teaspoon
- Cumin Seeds - 1 teaspoon
- Green Chilies - 2, finely chopped
- Salt - to taste
- Water - 500 ml
- Chura (Flattened Rice) - 100 grams
- Coriander Leaves - for garnish
Steps
- In a mixing bowl, whisk the yogurt with besan, turmeric powder, red chili powder, ginger paste, and salt until smooth.
- Add water gradually to the yogurt mixture, stirring continuously to avoid lumps.
- In a saucepan, heat 1 tablespoon of oil over medium heat. Add mustard seeds and cumin seeds. Once they start to splutter, add curry leaves and green chilies.
- Pour the yogurt mixture into the saucepan and cook on low heat for about 15-20 minutes, stirring occasionally, until it thickens.
- In another pan, lightly toast the chura (flattened rice) on low heat for about 3-4 minutes until it becomes slightly crispy.
- Serve the kadhi hot with the toasted chura. Garnish with fresh coriander leaves.
