Ingredients

  • Yogurt - 250 grams
  • Besan (Gram Flour) - 50 grams
  • Turmeric Powder - 1 teaspoon
  • Red Chili Powder - 1 teaspoon
  • Ginger Paste - 1 teaspoon
  • Curry Leaves - 8-10 leaves
  • Mustard Seeds - 1 teaspoon
  • Cumin Seeds - 1 teaspoon
  • Green Chilies - 2, finely chopped
  • Salt - to taste
  • Water - 500 ml
  • Chura (Flattened Rice) - 100 grams
  • Coriander Leaves - for garnish

Steps

  1. In a mixing bowl, whisk the yogurt with besan, turmeric powder, red chili powder, ginger paste, and salt until smooth.
  2. Add water gradually to the yogurt mixture, stirring continuously to avoid lumps.
  3. In a saucepan, heat 1 tablespoon of oil over medium heat. Add mustard seeds and cumin seeds. Once they start to splutter, add curry leaves and green chilies.
  4. Pour the yogurt mixture into the saucepan and cook on low heat for about 15-20 minutes, stirring occasionally, until it thickens.
  5. In another pan, lightly toast the chura (flattened rice) on low heat for about 3-4 minutes until it becomes slightly crispy.
  6. Serve the kadhi hot with the toasted chura. Garnish with fresh coriander leaves.
