Ingredients

  • Yogurt - 200 grams
  • Besan (chickpea flour) - 2 tablespoons
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1/2 teaspoon
  • Cumin seeds - 1/2 teaspoon
  • Mustard seeds - 1/2 teaspoon
  • Ginger - 1-inch piece, grated
  • Green chilies - 1, finely chopped
  • Curry leaves - 8-10 leaves
  • Salt - to taste
  • Water - 500 ml
  • Chopped coriander leaves - 2 tablespoons
  • Chaat masala - 1 teaspoon
  • Sev (crispy chickpea noodles) - for garnish
  • Pomegranate seeds - for garnish
  • Lemon juice - 1 tablespoon

Steps

  1. In a bowl, whisk the yogurt until smooth. Add besan, turmeric powder, red chili powder, and salt. Mix well until there are no lumps.
  2. In a pot, heat 1 tablespoon of oil over medium heat. Add cumin seeds, mustard seeds, and curry leaves. Sauté until the seeds start to crackle.
  3. Pour the yogurt mixture into the pot and stir continuously to prevent curdling. Gradually add water while stirring to achieve a smooth consistency.
  4. Add grated ginger and chopped green chilies. Let it simmer on low heat for 15-20 minutes, stirring occasionally until it thickens slightly.
  5. Once cooked, remove from heat and add lemon juice and chopped coriander leaves. Mix well.
  6. To serve, ladle the kadhi into bowls, sprinkle chaat masala on top, and garnish with sev and pomegranate seeds.
