- Yogurt - 200 grams
- Besan (chickpea flour) - 2 tablespoons
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1/2 teaspoon
- Cumin seeds - 1/2 teaspoon
- Mustard seeds - 1/2 teaspoon
- Ginger - 1-inch piece, grated
- Green chilies - 1, finely chopped
- Curry leaves - 8-10 leaves
- Salt - to taste
- Water - 500 ml
- Chopped coriander leaves - 2 tablespoons
- Chaat masala - 1 teaspoon
- Sev (crispy chickpea noodles) - for garnish
- Pomegranate seeds - for garnish
- Lemon juice - 1 tablespoon
Steps
- In a bowl, whisk the yogurt until smooth. Add besan, turmeric powder, red chili powder, and salt. Mix well until there are no lumps.
- In a pot, heat 1 tablespoon of oil over medium heat. Add cumin seeds, mustard seeds, and curry leaves. Sauté until the seeds start to crackle.
- Pour the yogurt mixture into the pot and stir continuously to prevent curdling. Gradually add water while stirring to achieve a smooth consistency.
- Add grated ginger and chopped green chilies. Let it simmer on low heat for 15-20 minutes, stirring occasionally until it thickens slightly.
- Once cooked, remove from heat and add lemon juice and chopped coriander leaves. Mix well.
- To serve, ladle the kadhi into bowls, sprinkle chaat masala on top, and garnish with sev and pomegranate seeds.
