Kadhi

- Besan (gram flour) - 50 grams
- Water - 500 ml
- Turmeric powder - 1/2 teaspoon
- Salt - 1 teaspoon
- Vegetable oil - 2 tablespoons
- Cumin seeds - 1 teaspoon
- Mustard seeds - 1 teaspoon
- Asafoetida (hing) - a pinch
- Green chili - 1, slit
- Ginger - 1 inch, grated
- Curry leaves - 8-10 leaves
- Fresh coriander leaves - for garnish
Steps
- In a mixing bowl, combine besan, turmeric powder, and salt. Gradually add water while whisking to create a smooth batter.
- Heat vegetable oil in a saucepan over medium heat. Add cumin seeds and mustard seeds; let them splutter.
- Add asafoetida, slit green chili, grated ginger, and curry leaves to the oil. Sauté for 1-2 minutes until fragrant.
- Pour the besan mixture into the pan and stir continuously to avoid lumps. Cook for about 15-20 minutes on low heat, stirring occasionally.
- Once the kadhi thickens and starts to bubble, remove it from the heat and garnish with fresh coriander leaves.
- Serve hot with steamed rice or roti.
