Ingredients

  • Besan (gram flour) - 50 grams
  • Water - 500 ml
  • Turmeric powder - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Vegetable oil - 2 tablespoons
  • Cumin seeds - 1 teaspoon
  • Mustard seeds - 1 teaspoon
  • Asafoetida (hing) - a pinch
  • Green chili - 1, slit
  • Ginger - 1 inch, grated
  • Curry leaves - 8-10 leaves
  • Fresh coriander leaves - for garnish

Steps

  1. In a mixing bowl, combine besan, turmeric powder, and salt. Gradually add water while whisking to create a smooth batter.
  2. Heat vegetable oil in a saucepan over medium heat. Add cumin seeds and mustard seeds; let them splutter.
  3. Add asafoetida, slit green chili, grated ginger, and curry leaves to the oil. Sauté for 1-2 minutes until fragrant.
  4. Pour the besan mixture into the pan and stir continuously to avoid lumps. Cook for about 15-20 minutes on low heat, stirring occasionally.
  5. Once the kadhi thickens and starts to bubble, remove it from the heat and garnish with fresh coriander leaves.
  6. Serve hot with steamed rice or roti.
