Ingredients

  • Whole wheat pizza base - 2 pieces (200g each)
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Capsicum (bell pepper) - 1 medium, finely chopped
  • Carrot - 1 medium, grated
  • Tomato - 1 medium, finely chopped
  • Green peas - 100 grams
  • Ginger-garlic paste - 1 teaspoon
  • Kadai masala - 2 teaspoons
  • Salt - to taste
  • Red chili powder - 1 teaspoon
  • Cumin powder - 1/2 teaspoon
  • Cheese (mozzarella or cheddar) - 100 grams, grated
  • Fresh coriander leaves - for garnish

Steps

  1. Preheat the oven to 220°C (428°F).
  2. In a pan, heat 1 tablespoon of olive oil over medium heat. Add chopped onions and sauté until translucent.
  3. Add ginger-garlic paste and sauté for another minute until fragrant.
  4. Stir in the capsicum, carrot, and green peas. Cook for 3-4 minutes until the vegetables are slightly tender.
  5. Add chopped tomatoes, kadai masala, salt, red chili powder, and cumin powder. Cook for 5 minutes until the tomatoes soften and blend with the vegetables.
  6. Remove the vegetable mixture from the heat and let it cool slightly.
  7. Place the whole wheat pizza bases on a baking tray. Brush each base with the remaining olive oil.
  8. Spread the vegetable mixture evenly over each pizza base.
  9. Sprinkle the grated cheese generously on top of the vegetable mixture.
  10. Bake in the preheated oven for 10-12 minutes or until the cheese is melted and golden.
  11. Remove from the oven, garnish with fresh coriander leaves, and slice the pizza before serving.
