- Basmati rice - 1 cup
- Mixed vegetables (carrots, peas, bell peppers, beans) - 1.5 cups
- Onion - 1 medium, thinly sliced
- Tomato - 1 medium, chopped
- Ginger-garlic paste - 1 teaspoon
- Green chilies - 1, slit
- Biryani masala - 1 tablespoon
- Cumin seeds - 1 teaspoon
- Coriander powder - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Cilantro (coriander leaves) - 2 tablespoons, chopped
- Mint leaves - 2 tablespoons, chopped
- Vegetable oil - 2 tablespoons
- Salt - to taste
- Water - 2 cups
Steps
- Rinse the basmati rice under cold water until the water runs clear, and soak it in water for 30 minutes. Drain and set aside.
- In a large pot, heat vegetable oil over medium heat. Add cumin seeds and let them splutter.
- Add sliced onions and sauté until they turn golden brown.
- Stir in ginger-garlic paste and green chilies, cooking for 1-2 minutes until fragrant.
- Add chopped tomatoes and cook until they soften, about 3-4 minutes.
- Mix in the biryani masala, coriander powder, turmeric powder, and salt. Cook for another 2 minutes.
- Add the mixed vegetables and sauté for 5 minutes, allowing them to mix well with the spices.
- Pour in 2 cups of water and bring to a boil. Once boiling, add the soaked and drained basmati rice.
- Reduce the heat to low, cover the pot with a lid, and cook for 15-20 minutes until the rice is fully cooked and the water is absorbed.
- Turn off the heat and let it sit for 5 minutes before fluffing the biryani with a fork. Garnish with chopped cilantro and mint leaves before serving.
