Ingredients

  • Basmati rice - 1 cup
  • Mixed vegetables (carrots, peas, bell peppers, beans) - 1.5 cups
  • Onion - 1 medium, thinly sliced
  • Tomato - 1 medium, chopped
  • Ginger-garlic paste - 1 teaspoon
  • Green chilies - 1, slit
  • Biryani masala - 1 tablespoon
  • Cumin seeds - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Cilantro (coriander leaves) - 2 tablespoons, chopped
  • Mint leaves - 2 tablespoons, chopped
  • Vegetable oil - 2 tablespoons
  • Salt - to taste
  • Water - 2 cups

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, and soak it in water for 30 minutes. Drain and set aside.
  2. In a large pot, heat vegetable oil over medium heat. Add cumin seeds and let them splutter.
  3. Add sliced onions and sauté until they turn golden brown.
  4. Stir in ginger-garlic paste and green chilies, cooking for 1-2 minutes until fragrant.
  5. Add chopped tomatoes and cook until they soften, about 3-4 minutes.
  6. Mix in the biryani masala, coriander powder, turmeric powder, and salt. Cook for another 2 minutes.
  7. Add the mixed vegetables and sauté for 5 minutes, allowing them to mix well with the spices.
  8. Pour in 2 cups of water and bring to a boil. Once boiling, add the soaked and drained basmati rice.
  9. Reduce the heat to low, cover the pot with a lid, and cook for 15-20 minutes until the rice is fully cooked and the water is absorbed.
  10. Turn off the heat and let it sit for 5 minutes before fluffing the biryani with a fork. Garnish with chopped cilantro and mint leaves before serving.
