Ingredients

  • Green bell pepper - 100 grams, diced
  • Red bell pepper - 100 grams, diced
  • Carrot - 100 grams, diced
  • Cauliflower - 100 grams, chopped into florets
  • Green peas - 100 grams
  • Onion - 1 medium, finely chopped
  • Tomato - 1 medium, pureed
  • Ginger - 1 inch, grated
  • Garlic - 3 cloves, minced
  • Green chili - 1, slit
  • Kadai masala - 1 tablespoon
  • Cumin seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1/2 teaspoon
  • Coriander powder - 1 teaspoon
  • Salt - to taste
  • Oil - 2 tablespoons
  • Fresh coriander leaves - for garnish

Steps

  1. Heat oil in a kadai or a deep pan over medium heat.
  2. Add cumin seeds and let them splutter.
  3. Add the finely chopped onion and sauté until golden brown.
  4. Stir in the grated ginger, minced garlic, and slit green chili; sauté for another minute.
  5. Add the pureed tomato and cook until the oil separates from the mixture.
  6. Add turmeric powder, red chili powder, coriander powder, and Kadai masala; mix well.
  7. Incorporate the diced green bell pepper, red bell pepper, carrot, cauliflower, and green peas into the pan.
  8. Add salt to taste and mix everything well, ensuring the vegetables are coated with the spices.
  9. Cover and cook for about 10-12 minutes, stirring occasionally until the vegetables are tender.
  10. Garnish with fresh coriander leaves before serving.
