- Tomato - 1 medium, pureed
- Ginger - 1 inch, grated
- Garlic - 3 cloves, minced
- Green chili - 1, slit
- Kadai masala - 1 tablespoon
- Cumin seeds - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1/2 teaspoon
- Coriander powder - 1 teaspoon
- Salt - to taste
- Oil - 2 tablespoons
- Fresh coriander leaves - for garnish
Steps
- Heat oil in a kadai or a deep pan over medium heat.
- Add cumin seeds and let them splutter.
- Add the finely chopped onion and sauté until golden brown.
- Stir in the grated ginger, minced garlic, and slit green chili; sauté for another minute.
- Add the pureed tomato and cook until the oil separates from the mixture.
- Add turmeric powder, red chili powder, coriander powder, and Kadai masala; mix well.
- Incorporate the diced green bell pepper, red bell pepper, carrot, cauliflower, and green peas into the pan.
- Add salt to taste and mix everything well, ensuring the vegetables are coated with the spices.
- Cover and cook for about 10-12 minutes, stirring occasionally until the vegetables are tender.
- Garnish with fresh coriander leaves before serving.
