- Tofu - 200 grams
- Bell pepper (mixed colors) - 1 medium, diced
- Onion - 1 medium, finely chopped
- Tomatoes - 2 medium, pureed
- Ginger - 1 inch, grated
- Garlic - 3 cloves, minced
- Green chili - 1, slit
- Cumin seeds - 1 teaspoon
- Coriander powder - 1 teaspoon
- Garam masala - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1/2 teaspoon
- Salt - to taste
- Oil - 2 tablespoons
- Fresh coriander leaves - for garnish
Steps
- Press the tofu to remove excess water, then cut into cubes.
- Heat oil in a kadai or deep pan over medium heat. Add cumin seeds and let them splutter.
- Add chopped onions and sauté until they turn golden brown.
- Stir in the grated ginger, minced garlic, and slit green chili, and sauté for an additional 1-2 minutes until fragrant.
- Add the pureed tomatoes and cook until the oil separates from the mixture, about 5-7 minutes.
- Add coriander powder, turmeric powder, red chili powder, and salt. Stir well and cook for another 2-3 minutes.
- In a separate pan, lightly fry the tofu cubes until golden brown on all sides, then add them to the tomato mixture.
- Add diced bell peppers and garam masala. Mix gently and cook for another 5 minutes until the peppers are tender.
- Garnish with fresh coriander leaves and serve hot with rice or naan.
