Ingredients

  • Tofu - 200 grams
  • Bell pepper (mixed colors) - 1 medium, diced
  • Onion - 1 medium, finely chopped
  • Tomatoes - 2 medium, pureed
  • Ginger - 1 inch, grated
  • Garlic - 3 cloves, minced
  • Green chili - 1, slit
  • Cumin seeds - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1/2 teaspoon
  • Salt - to taste
  • Oil - 2 tablespoons
  • Fresh coriander leaves - for garnish

Steps

  1. Press the tofu to remove excess water, then cut into cubes.
  2. Heat oil in a kadai or deep pan over medium heat. Add cumin seeds and let them splutter.
  3. Add chopped onions and sauté until they turn golden brown.
  4. Stir in the grated ginger, minced garlic, and slit green chili, and sauté for an additional 1-2 minutes until fragrant.
  5. Add the pureed tomatoes and cook until the oil separates from the mixture, about 5-7 minutes.
  6. Add coriander powder, turmeric powder, red chili powder, and salt. Stir well and cook for another 2-3 minutes.
  7. In a separate pan, lightly fry the tofu cubes until golden brown on all sides, then add them to the tomato mixture.
  8. Add diced bell peppers and garam masala. Mix gently and cook for another 5 minutes until the peppers are tender.
  9. Garnish with fresh coriander leaves and serve hot with rice or naan.
