Ingredients
- Tofu - 200 grams
- Onion - 1 medium, finely chopped
- Tomato - 2 medium, pureed
- Bell Pepper (Capsicum) - 1 medium, diced
- Ginger - 1 inch, grated
- Garlic - 3 cloves, minced
- Green Chili - 1, slit
- Turmeric Powder - 1/2 teaspoon
- Red Chili Powder - 1 teaspoon
- Coriander Powder - 1 teaspoon
- Garam Masala - 1/2 teaspoon
- Cumin Seeds - 1/2 teaspoon
- Cilantro (Coriander leaves) - 2 tablespoons, chopped
- Oil (Coconut or any vegetable oil) - 2 tablespoons
- Salt - to taste
- Water - 1/2 cup
Steps
- Press the tofu to remove excess water and cut it into cubes. Heat 1 tablespoon of oil in a pan over medium heat and fry the tofu cubes until golden brown. Remove and set aside.
- In the same pan, add the remaining tablespoon of oil and cumin seeds. Once they splutter, add the chopped onions and sauté until translucent.
- Add the grated ginger, minced garlic, and slit green chili. Sauté for another minute until fragrant.
- Stir in the pureed tomatoes along with turmeric powder, red chili powder, coriander powder, and salt. Cook until the mixture reduces and the oil starts to separate, about 5-7 minutes.
- Add the diced bell pepper and water to the pan. Let it simmer for another 5 minutes until the bell pepper is tender.
- Mix in the fried tofu and garam masala. Cook for an additional 3-4 minutes, allowing the flavors to meld together.
- Garnish with chopped cilantro and serve hot with rice or bread.
