Ingredients

  • Tofu - 200 grams
  • Onion - 1 medium, finely chopped
  • Tomato - 2 medium, pureed
  • Bell Pepper (Capsicum) - 1 medium, diced
  • Ginger - 1 inch, grated
  • Garlic - 3 cloves, minced
  • Green Chili - 1, slit
  • Turmeric Powder - 1/2 teaspoon
  • Red Chili Powder - 1 teaspoon
  • Coriander Powder - 1 teaspoon
  • Garam Masala - 1/2 teaspoon
  • Cumin Seeds - 1/2 teaspoon
  • Cilantro (Coriander leaves) - 2 tablespoons, chopped
  • Oil (Coconut or any vegetable oil) - 2 tablespoons
  • Salt - to taste
  • Water - 1/2 cup

Steps

  1. Press the tofu to remove excess water and cut it into cubes. Heat 1 tablespoon of oil in a pan over medium heat and fry the tofu cubes until golden brown. Remove and set aside.
  2. In the same pan, add the remaining tablespoon of oil and cumin seeds. Once they splutter, add the chopped onions and sauté until translucent.
  3. Add the grated ginger, minced garlic, and slit green chili. Sauté for another minute until fragrant.
  4. Stir in the pureed tomatoes along with turmeric powder, red chili powder, coriander powder, and salt. Cook until the mixture reduces and the oil starts to separate, about 5-7 minutes.
  5. Add the diced bell pepper and water to the pan. Let it simmer for another 5 minutes until the bell pepper is tender.
  6. Mix in the fried tofu and garam masala. Cook for an additional 3-4 minutes, allowing the flavors to meld together.
  7. Garnish with chopped cilantro and serve hot with rice or bread.
