  • Firm tofu - 200 grams, cubed
  • Onion - 1 medium, thinly sliced
  • Tomato - 1 medium, chopped
  • Bell pepper - 1 medium, diced
  • Ginger-garlic paste - 1 tablespoon
  • Biryani masala - 1 tablespoon
  • Turmeric powder - 1/2 teaspoon
  • Cumin seeds - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1/2 teaspoon
  • Green chili - 1, slit
  • Fresh coriander leaves - 2 tablespoons, chopped
  • Cooking oil - 2 tablespoons
  • Salt - to taste
  • Water - 400 ml

Steps

  1. Rinse the basmati rice under cold water until the water runs clear. Soak it in water for 30 minutes, then drain.
  2. In a pan, heat 2 tablespoons of cooking oil over medium heat. Add cumin seeds and let them splutter.
  3. Add the sliced onion and sauté until golden brown. Then add the ginger-garlic paste and green chili, cooking for another minute.
  4. Stir in the chopped tomato, turmeric powder, coriander powder, and biryani masala. Cook until the tomatoes are soft.
  5. Add the cubed tofu and diced bell pepper to the pan, mixing gently to coat them in the spices. Cook for about 5 minutes until the tofu is slightly golden.
  6. Add the soaked and drained basmati rice to the pan, stirring gently. Pour in 400 ml of water and salt to taste.
  7. Bring the mixture to a boil, then reduce the heat to low, cover, and let it cook for 15-20 minutes until the rice is fully cooked and water is absorbed.
  8. Once cooked, fluff the rice with a fork, sprinkle garam masala and chopped coriander leaves on top, and serve hot.
