- Firm tofu - 200 grams
- Bell peppers (red, green, yellow) - 1 cup, diced
- Onion - 1 medium, sliced
- Tomato - 1 medium, chopped
- Ginger - 1 inch, grated
- Garlic - 3 cloves, minced
- Green chili - 1, slit
- Kadai masala - 1 tablespoon
- Turmeric powder - 1/2 teaspoon
- Cumin seeds - 1 teaspoon
- Cooking oil - 2 tablespoons
- Salt - to taste
- Fresh coriander leaves - for garnish
Steps
- Press the tofu to remove excess moisture, then cut it into cubes.
- Heat 1 tablespoon of oil in a pan over medium heat, add the cumin seeds, and let them splutter.
- Add the sliced onions and sauté until translucent.
- Stir in the grated ginger, minced garlic, and slit green chili; cook for 1-2 minutes until fragrant.
- Add the chopped tomatoes and cook until they soften, about 3-4 minutes.
- Sprinkle in the turmeric powder and kadai masala, stirring well to combine.
- In a separate pan, heat the remaining oil and add the tofu cubes, frying them until golden brown on all sides.
- Once the tofu is crispy, add it to the pan with the tomato mixture along with the diced bell peppers and salt.
- Mix gently to coat the tofu and vegetables in the spices, cooking for an additional 5-7 minutes until the bell peppers are slightly tender.
- Garnish with fresh coriander leaves before serving.
