Ingredients

  • Firm tofu - 200 grams
  • Bell peppers (red, green, yellow) - 1 cup, diced
  • Onion - 1 medium, sliced
  • Tomato - 1 medium, chopped
  • Ginger - 1 inch, grated
  • Garlic - 3 cloves, minced
  • Green chili - 1, slit
  • Kadai masala - 1 tablespoon
  • Turmeric powder - 1/2 teaspoon
  • Cumin seeds - 1 teaspoon
  • Cooking oil - 2 tablespoons
  • Salt - to taste
  • Fresh coriander leaves - for garnish

Steps

  1. Press the tofu to remove excess moisture, then cut it into cubes.
  2. Heat 1 tablespoon of oil in a pan over medium heat, add the cumin seeds, and let them splutter.
  3. Add the sliced onions and sauté until translucent.
  4. Stir in the grated ginger, minced garlic, and slit green chili; cook for 1-2 minutes until fragrant.
  5. Add the chopped tomatoes and cook until they soften, about 3-4 minutes.
  6. Sprinkle in the turmeric powder and kadai masala, stirring well to combine.
  7. In a separate pan, heat the remaining oil and add the tofu cubes, frying them until golden brown on all sides.
  8. Once the tofu is crispy, add it to the pan with the tomato mixture along with the diced bell peppers and salt.
  9. Mix gently to coat the tofu and vegetables in the spices, cooking for an additional 5-7 minutes until the bell peppers are slightly tender.
  10. Garnish with fresh coriander leaves before serving.
