- Fresh spinach - 200 grams
- Tomato - 1 medium, chopped
- Onion - 1 medium, finely chopped
- Ginger - 1 inch, grated
- Garlic - 2 cloves, minced
- Green chili - 1, slit
- Cumin seeds - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1/2 teaspoon
- Garam masala - 1/2 teaspoon
- Cooking oil - 2 tablespoons
- Salt - to taste
- Water - 100 ml
Steps
- Wash the spinach thoroughly and chop it roughly.
- Heat the cooking oil in a kadai or a deep pan over medium heat.
- Add cumin seeds to the hot oil and let them splutter.
- Add the finely chopped onion and sauté until it turns golden brown.
- Stir in the grated ginger, minced garlic, and slit green chili. Cook for 1-2 minutes until fragrant.
- Add the chopped tomato, turmeric powder, red chili powder, and salt. Cook until the tomatoes soften.
- Add the chopped spinach and mix well. Cook for about 5-7 minutes, stirring occasionally.
- Pour in the water and cover the pan. Let it simmer for another 5 minutes until the spinach is fully cooked and the flavors meld.
- Sprinkle garam masala on top, stir, and cook for an additional minute.
- Serve hot with roti or rice.
