Ingredients

  • Basmati rice - 1 cup
  • Water - 2 cups
  • Oil (vegetable or olive) - 2 tablespoons
  • Cumin seeds - 1 teaspoon
  • Onion (finely chopped) - 1 medium
  • Garlic (minced) - 2 cloves
  • Ginger (grated) - 1 teaspoon
  • Bell pepper (diced) - 1 medium
  • Carrot (diced) - 1 medium
  • Green peas - 1/2 cup
  • Tomato (chopped) - 1 medium
  • Turmeric powder - 1/2 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1/2 teaspoon
  • Salt - to taste
  • Fresh cilantro (chopped) - for garnish

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
  2. In a large pot, heat the oil over medium heat and add cumin seeds, allowing them to sizzle for a few seconds.
  3. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  4. Stir in the minced garlic and grated ginger, cooking for another minute until fragrant.
  5. Add the diced bell pepper and carrot, cooking for 3-4 minutes until slightly softened.
  6. Mix in the green peas and chopped tomato, cooking until the tomato is soft.
  7. Sprinkle in the turmeric powder, coriander powder, garam masala, and salt, stirring well to combine.
  8. Drain the soaked rice and add it to the pot, gently mixing to coat the rice with the spices and vegetables.
  9. Pour in the 2 cups of water and bring to a boil. Once boiling, reduce the heat to low, cover, and simmer for 15 minutes or until the rice is cooked and water is absorbed.
  10. Remove from heat and let it sit covered for 5 minutes before fluffing with a fork. Garnish with fresh cilantro before serving.
