- Basmati rice - 1 cup
- Water - 2 cups
- Oil (vegetable or olive) - 2 tablespoons
- Cumin seeds - 1 teaspoon
- Onion (finely chopped) - 1 medium
- Garlic (minced) - 2 cloves
- Ginger (grated) - 1 teaspoon
- Bell pepper (diced) - 1 medium
- Carrot (diced) - 1 medium
- Green peas - 1/2 cup
- Tomato (chopped) - 1 medium
- Turmeric powder - 1/2 teaspoon
- Coriander powder - 1 teaspoon
- Garam masala - 1/2 teaspoon
- Salt - to taste
- Fresh cilantro (chopped) - for garnish
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
- In a large pot, heat the oil over medium heat and add cumin seeds, allowing them to sizzle for a few seconds.
- Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Stir in the minced garlic and grated ginger, cooking for another minute until fragrant.
- Add the diced bell pepper and carrot, cooking for 3-4 minutes until slightly softened.
- Mix in the green peas and chopped tomato, cooking until the tomato is soft.
- Sprinkle in the turmeric powder, coriander powder, garam masala, and salt, stirring well to combine.
- Drain the soaked rice and add it to the pot, gently mixing to coat the rice with the spices and vegetables.
- Pour in the 2 cups of water and bring to a boil. Once boiling, reduce the heat to low, cover, and simmer for 15 minutes or until the rice is cooked and water is absorbed.
- Remove from heat and let it sit covered for 5 minutes before fluffing with a fork. Garnish with fresh cilantro before serving.
